Fennel Slaw
If you can shred, grate or dice, this is by far the easiest Meatless Monday Recipe.

Fennel Slaw

1 bulb of Fennel or Anise, chopped or shredded.
1 cup of carrots, shredded
½ cup of red onion, finely chopped
½ cup of green pepper, chopped
3 tbs. of fresh squeezed lemon juice or apple cider vinegar
1 tsp. of sea salt
1 tsp. of freshly ground pepper
1 tsp. of coriander

Mix all ingredients together.  Serve at room temperature or chilled. 

** Adding shredded beets and toasted sesame seeds brings this already tasty dish to another level for flavor.
