Summer Peas with Brown Rice

Mint and orange are the surprise ingredients that both add to the freshness and zest.

INGREDIENTS 

(preferably organic)

2 cups of brown rice, cooked
4 cups green peas, fresh or frozen
2 large shallots, thinly sliced
2 tablespoons of extra virgin olive oil
Juice from half of an orange
1 Sprig of mint, stripped and finely chopped
Sea salt and freshly ground black pepper, to taste
Zest of 1 orange

INSTRUCTIONS

Heat oil in a 10″ cast iron skillet over medium-high heat; add shallots, stirring often, until soft,  Add peas, juice, and salt and pepper stirring, until heated through. Remove from heat and stir in rice, mint and orange zest before serving.
