MEATLESS MONDAY RECIPE: Black Bean Burgers


Black Bean Burgers

  • 1 (15 ounce) can black beans, low sodium, organic or 2 cups of dry black beans, soaked overnight
  • 1 egg
  • 1 small onion, chopped or 1/2 large onion
  • 1 cup whole wheat bread crumbs
  • 1/2 red bell pepper, chopped
  • 1 clove of garlic, minced
  • Sea salt and pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 6 whole wheat hamburger buns or pita
  • 6 leaves of green lettuce such as boston or romaine
  • 2 tomatoes, sliced (I prefer campari tomatoes)
  • 1/2 small red onion, thinly sliced
  • 1 small avocado sliced
Put beans in a large bowl and mash well with a fork. Add egg, onion, bread crumbs, bell pepper, garlic, sea salt, and pepper. Mix well to combine then shape into 6 patties.


Heat oil in a large skillet (I use a cast iron skillet) over medium heat. Arrange patties in a single layer and cook, flipping once, until golden brown on both sides and cooked through, about 10 minutes total. Transfer to buns, top with lettuce, tomatoes and red onions and serve with avocado slices.
