Meatless Monday Mediterranean Style

Mediterranean Chickpea, Farro and Arugula Salad

1 cup farro (an Italian whole wheat grain) or spelt, cooked and drained
1 cup chickpeas, soaked overnight or 1 can organic no sodium chickpeas rinsed and drained
2 bunches of arugula
½ of grape tomatoes, halved
1 red onion, finely sliced
1 red pepper, chopped
¼ of a cup of black Sicilian olives (with crushed red pepper), pitted
Juice of 1 lemon
2 tablespoons of extra virgin olive oil
Sea salt to taste
Pepper to taste
Grated ricotta salata

Combine all the ingredients in a large bowl and toss until well combined.  Serve warm or cold.
