Meatless Monday Recipe: Potato Leek Soup


Potato Leek Soup

INGREDIENTS
2 tablespoons olive oil
4-5 medium potatoes, peeled and chopped
3 large leeks, rinsed well and thinly sliced
6 cups vegetable stock
Sea salt, to taste
1/4 teaspoon dried dill
DIRECTIONS
  1. Heat the oil in a large pot over medium heat. Add the leeks. Cook, stirring occasionally, until the vegetables have begun to soften and brown slightly.
  2. Add the potatoes and the vegetable stock, and bring to a boil. Reduce the heat to low, and simmer for 30-40 minutes, or until the potatoes are tender.
  3. Blend until smooth either using an immersion blender or cool and transferr to a blender in batches.
  4. Add dill and serve..
Serves 6.
