Meatless Monday Recipe: Potato Leek Soup
Potato Leek Soup
INGREDIENTS
2 tablespoons olive oil
4-5 medium potatoes, peeled and chopped
3 large leeks, rinsed well and thinly sliced
6 cups vegetable stock
Sea salt, to taste
1/4 teaspoon dried dill

DIRECTIONS
- Heat the oil in a large pot over medium heat. Add the leeks. Cook, stirring occasionally, until the vegetables have begun to soften and brown slightly.
- Add the potatoes and the vegetable stock, and bring to a boil. Reduce the heat to low, and simmer for 30-40 minutes, or until the potatoes are tender.
- Blend until smooth either using an immersion blender or cool and transferr to a blender in batches.
- Add dill and serve..
Serves 6.
