Meatless Monday Recipe: Black Bean Soup
Black Bean Soup
Ingredients
1 pound black beans, dried
1 large onion, chopped
1-2 cloves of garlic, minced

1 teaspoon of chili powder
¼ teaspoon of cumin
1 tablespoon of extra virgin olive oil
Cayenne pepper, optional
Sea salt to taste before serving
Fresh cilantro, lime and avocado for serving
Instructions
- Pick over beans to remove
any dirt, stones or foreign objects. Wash well, then soak for 8 hours in
ample cold water or cook with just water for an hour. Drain water.
- In a pot, add olive oil
and onion and cook until onions are tender.
- Add garlic, chili powder
and cayenne pepper.
- Add beans and 4 cups of
water. (For added flavor, you can substitute water for vegetable stock).
- Set over medium heat and
cook slowly until beans are tender (1 – 2 hours), add salt, if needed.
- To serve, add some chopped
fresh cilantro, a couple of slices of avocado and squeeze a wedge of lime.
