Meatless Monday Recipe: Black Bean Soup


Black Bean Soup

Ingredients
1 pound black beans, dried
1 large onion, chopped
1-2 cloves of garlic, minced
1 teaspoon of chili powder
¼ teaspoon of cumin
1 tablespoon of extra virgin olive oil
Cayenne pepper, optional
Sea salt to taste before serving
Fresh cilantro, lime and avocado for serving

Instructions
  1. Pick over beans to remove any dirt, stones or foreign objects. Wash well, then soak for 8 hours in ample cold water or cook with just water for an hour.  Drain water.
  2. In a pot, add olive oil and onion and cook until onions are tender.
  3. Add garlic, chili powder and cayenne pepper.
  4. Add beans and 4 cups of water. (For added flavor, you can substitute water for vegetable stock).
  5. Set over medium heat and cook slowly until beans are tender (1 – 2 hours), add salt, if needed.
  6. To serve, add some chopped fresh cilantro, a couple of slices of avocado and squeeze a wedge of lime.
