Meatless Monday Recipe: Vegan Lentil Balls

Since signing the Meatless Monday pledge, I'm always thinking of new and creative ways to make a healthy and satisfying meal that even carnivores would love.

I also like to reinvent new dishes with  leftovers.  Who wants to eat leftovers when you can have something new and exciting for dinner.  So there I was.  Standing in front on the refrigerator, wondering what to do with the Warm Lentil Salad I made the other day.
Hmm.  Maybe I can make Lentil Burgers.  Hmm.
I also now notice about a cup of boiled potatoes in the fridge.  Hmm.  I can mix the Warm Lentil Salad with the potatoes and make Lentil Balls.  That's it!  I'm going to make that!  I baked them in the oven and they turned out delicious.  It smelled like stuffing while it was cooking and kind of reminded me of falafel.
Of course, if you're making this from scratch, you'll need the recipe.

Lentil Balls
2 cups of Green or Brown Lentils
1 carrot chopped
1 small onion chopped
1 rib of celery chopped
1/4 of a teaspoon cumin
1/4 of a teaspoon dill
1 small potato, peeled and quartered
Real salt and pepper to taste
1 tablespoon of Extra Virgin Olive Oil

Sautee carrot, onion, celery in saucepan with olive oil until soft.  Add lentils, cumin and dill. Add 2 cups of water and simmer until lentils are tender.  Add salt and pepper to taste.  In another small pot, boil potato until soft.  Drain water and mash with fork.  Add potato to lentil mixture.  Let cool until you can touch it with your hands.  Lightly grease pan with Olive oil. Take heaping tablespoon full of lentil and potato mixture and form into a ball.  Place into pan.  Mixture will make approximately 6 - 8 balls.  Bake at 400 degrees until crust has formed on outside. Serve as a side dish or in a pita with lettuce and tomato.
