Meatless Monday Recipe: Black Bean & Brown Rice Burrito
MEATLESS MONDAY
Black Bean & Brown Rice Burrito
1 cup of brown rice, cooked
1 tbs of extra virgin olive oil
1 medium onion, chopped
3 tsp chili powder
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1 cup of dried black beans, cooked
1 cup of corn, cooked
1 small pepper, chopped
8 flour tortillas for burritos
1 small tomato chopped
1/4 avocado sliced thin
1 cup greek yogurt
sea salt to taste
In a caste iron skillet, heat up the oil and soften the onions and peppers. Add chili powder, cayenne pepper, and cumin. Add brown rice, black beans and corn. Heat through. Add salt if you like. Assemble burrito with brown rice mixture, avocado and tomato. Serve.
